There were a few things that you could count on when you visited our grandparents on their farm in outback NSW.
A roast lamb meal
Bourke meat pies for lunch
A biscuit jar full of ANZAC bickie's
(Why is it always about food with us!)
We think Nan's recipe for ANZAC's are the best, they are crispy on the outside and soft and chewy on the inside. We would like to share our Nan's recipe with you - let us know what you think.
Olive's ANZAC Biscuits
1 Cup Rolled Oats
3/4 Cup Coconut
1 Cup Plain Flour
1 Cup Sugar
1/2 Tsp Bicarb Soda
2 TAB Boiling water
125g Butter
1 TAB Golden Syrup
Preheat oven to 160 degrees
Combine oats, coconut, sugar, flour in large bowl.
Melt butter and syrup.
Mix bicarb soda and water, add to syrup mixture.
Add syrup mixture to dry ingredients, combine.
Spoon out tablespoons of the mixture onto trays.
Bake for 20 minutes (keep an eye on them)
Cool on trays.
Enjoy with a cup of tea, from a tea pot!

well thank you - i just whipped them up, and they are baking as we speak - i'll let you know if how olive's recipe is, but considering my master taste tester is licking the bowl clean, it already gets the thumbs up! xx
